This time we propose a sweet and special recipe: manna biscuits with extra virgin olive oil.🍪

Why is it a special dessert? For two reasons:

a) most desserts are prepared with butter, while this recipe calls for extra virgin olive oil, a Mediterranean food, closer to the Italian tradition than butter, which comes from the Nordic/French tradition.

b) the special ingredient that gives sweetness to these cookies is the famous “manna”. It is not just a biblical word: it is also a delight to use in the kitchen! 👩‍🍳

Manna is extracted from the bark of the ash tree; it is a crystallized sap used as a natural sweetener.
It is  a Slow Food presidium, harvested mainly between Castelbuono and Pollina in the Madonie, Sicily.
Ancestral and natural element in its own right, unrefined, non-industrial, hand-picked.
Its flavor is reminiscent of brown sugar and licorice.

🍪 Manna biscuits

Ingredients:

  • 250 g type 0 flour
  • 250 g wholemeal flour
  • 80 g manna dissolved in milk
  • 2 eggs
  • 3 tablespoons extra virgin olive oil
  • 250 g sourdough starter
  • 1/4 liter of milk

Preparation:

🥣Knead all the ingredients until smooth.

🤎Create the cookies in the desired shape and bake them in the oven at 220°C until golden brown.
