Wow, the Gazpacho is served

It’s a classic situation: we go on holiday, we taste the local dishes and then we try to make them again, once we get home. For example, if you go to Spain 💃, don’t you try cooking Gazpacho, on the way back?!😀

🍲Gazpacho is a very tasty cold soup made with raw vegetables. It is often served in summer (obviously, the dish originates from southern Spain, in Andalusia, that reaches very scorching temperatures 🥵) and it is appreciated for its freshness and lightness.

Here is the recipe for gazpacho:

Ingredients:

– 4-6 ripe tomatoes (about 1 kg)

– 1 red pepper and 1 green pepper

– 1 cucumber

– 1 onion

– 2-3 cloves of garlic

– 1/4 liter of extra virgin olive oil

– 2 tablespoons of red wine vinegar

– Salt and pepper to taste

– Cold water (variable amount)

– Fresh herbs (optional, e.g. basil or parsley, mint)

How to prepare gazpacho

1. Cut the tomatoes, peppers, cucumber and onion into small pieces.

2. Put the vegetables in a mixer with the garlic, some olive oil, some vinegar and some bread (if using).
Blend it until smooth.

3. Add cold water to reach the desired consistency (more liquid or thicker, as you want).

4. Season with salt and pepper.

5. Put the gazpacho in the refrigerator for a few minutes and then serve it with fresh herbs, croutons and a drizzle of raw oil.


💡Idea:

🧄If garlic is indigestible to you, do not include it among the ingredients, but season the dish with our garlic, bay leaf and spicy flavored oil. The red hot chilli pepper is whole, it doesn’t sting, it leaves a slight aftertaste only, try it!
